How to

No boiling and no yeast required!

Prep

Prep: 15-20 minutes

Baking time: 25 minutes

Equipment Needed: large bowl, wooden spoon or spatula, baking sheet

Preheat oven to 400°F. Set aside parchment paper, extra flour, and seasoning.

Combine

Combine mix and Greek yogurt in a large bowl with wooden spoon or spatula.

Mix

Mix until all dry ingredients are incorporated into the dough.

 

Knead

Knead and fold until the dough is tactile and slightly sticky, about 2 minutes. The more you knead, the chewier the bagel. Depending on the yogurt, a bit of extra flour may be helpful to add in during kneading. If dough is too crumbly, add a bit more yogurt until tactile.

We recommend kneading the dough in a large bowl.

Split

Split your dough into equal sections and roll into balls. If you are feeling professional, use a scale here to evenly separate the balls. Additional flour may be helpful to roll into balls.

Shape

Roll method:

Lightly flour your surface.

Roll out the ball until it is about 1” thick.

Combine ends together (if there is too much flour add a drop of water).

Aim to make a 2-3” hole in the center. The hole should be bigger than you think as the bagel rises in the oven!

“Poke and stretch” method (easier! but less smooth bagels):

It is helpful to have flour on your hands and the working surface as dough is likely sticky.

Flour up your thumb and stick to the center of the dough.

Once your thumb is through, squeeze dough from the inside hole to slowly stretch it out.

Continue squeezing the dough as you work to form an even circle.

Aim to make a 2-3” hole in the center. The hole should be bigger than you think as the bagel rises in the oven!

Brush

Using a whisked egg or water, brush the tops of the bagels. This is what will make them ready for toppings prior to baking and shiny once baked.

Sprinkle toppings to taste.

Bake

Bake for 25 minutes at 400°F or until golden brown. Depending on your oven and the size a longer bake time may be needed. We recommend baking on the top rack.

For a less chewy bagel bottom, stack two baking sheets!
